Changing the physical properties of edible oil requires adding hydrogen in the presence of a catalyst to increase its saturation under strict processing conditions. The catalyst is filtered out after the reaction is complete. The hydrogenator uses vortex agitators and baffles to efficiently mix the oil and gas and accurately control the relevant processing parameters. The oil is heated to the reaction temperature, hydrogen is injected, and the gas portion of the treatment tank is filled, heated to the reaction pressure, and the reaction is sampled and tested regularly until it reaches the desired saturation.
